Crepes du Jour

I recently made a very delicious, homemade treat! I was pretty impressed with myself for getting an unfamiliar recipe right the first time! I combined a few different recipes to create a delicious dessert crepe.



What you'll need:

Crepes:
3/4 cup flour
1 teaspoon salt
1 cup whole milk
2 eggs
2 tablespoons sugar
1 tablespoon melted butter
1/2 teaspoon vanilla

First, combine the flour and salt. Whisk in milk a little at a time, then the eggs. Then whisk in the sugar, melted butter, and vanilla. Heat a small, nonstick skillet [start off at medium high]. Add a pat of butter, swirling the skillet to coat it with the melted butter. If this butter browns, use a paper towel to wipe it out, turn down the heat, give it a few minutes to adjust, then try again; do this until the butter melts, but does not brown.

Add 1/3 cup of the batter to the skillet, moving the skillet in a circular pattern to coat the pan with a thin, even layer of batter. Cook for about a minute (until lightly brown on the underside), then flip and cook for about 45 seconds to a minute longer. Remove and repeat with the rest of the batter.

Filling:
1 package (8 oz) cream cheese, softened
1/2 cup confectioners' sugar
1-2 Tablespoons milk 

Blend all ingredients, adding only enough milk to make cream cheese mixture more easily spreadable. It should still be more solid than liquid [think thicker than yogurt].

Regardless of the formal way to make a crepe, I spread the filling over the crepe like the bottom half of a sandwich, then rolled the crepe like a pinwheel. Then I drizzled the crepe with a store-bought raspberry sauce. It was a perfect combination!
